DID YOU KNOW: Proper food hygiene is a crucial aspect of ensuring food safety and preventing foodborne illnesses, at home, during business hours and while on a well-deserved vacation?
Food is one of the basic necessities of life. We actually eat to live. Food contains essential substances our body needs to function. It provides energy for daily work, substances essential for the growth, repair, and maintenance of body tissues and for the regulation of vital processes. No one survives without food. It is as serious as that.
However, as beneficial as food is, food can be a vendor for some diseases and illnesses that can limit one’s operations and possibly end life. This is because contaminated foods effectively promote spread of illnesses. Wow! That’s a surprise, right?
For an individual to get the full benefits of food, it becomes imperative that proper food hygiene is maintained.
Food hygiene deals with practices and guidelines of keeping food safe. This involves the way food is handled, transported, stored and processed. This is as simple as thoroughly washing fruits before you eat it or serve it to someone, ensuring the right temperatures are maintained all through the food chain and separating foods to be eaten fresh from other foods e.g., using same knife for meat and fish to also cut fruits and vegetables. It’s simple, isn’t it? It’s important to be intentional about proper food hygiene everywhere.
For the purpose of this write up we will concentrate on how to prevent food from spoiling, safe food handling and proper sanitary practices
Microorganisms are the major causes of food spoilage. Most microorganisms grow faster in warm, moist, protein-rich environment. So, when food is kept in this type of environment for a long time it will favour growth of bacteria which could harm an individual. Some food flasks may not retain hot or very cold temperatures that will be unfavourable for microbial growth. So, it is best to eat food when freshly prepared or when not in a warm and moist environment for a long time.
Safe food handling can be maintained effectively by proper handwashing. It has been reported that proper hand washing reduces the risk of foodborne illness by 50%. (1). Wash hands freely before, during and after food preparation. Even when cutleries are to be used, to eat it becomes important to also wash hands. To ensure proper hand washing, wash hands each time with soap and water for about 20 seconds. (2)
Avoid damaged or foods with off smell or taste. Eat and serve only wholesome foods.
For businesses that deal with food, there is need for regular training of staff on proper food hygiene to ensure safety of food in the organization.
